The ingredients needed to make Mixed mukimo:
  1. Prepare 1 big arrowroot
  2. Take 1 big sweet potatoe
  3. Take 2 pieces pumpkin
  4. Get 3 potatoes
  5. Make ready 2 overripe banana
  6. Make ready 1/4 kg pre cooked black beans
  7. Make ready Pinch salt
  8. Get Cooking oil
  9. Prepare 2 cloves garlic
  10. Make ready Spring onion

When almost cooked add your boiled maize and salt to taste. Add to the mukimo and mix until fully combined. Raphael's Tip: In place of the pumpkin leaves, you can use fresh peas to mash together with the potatoes to give the green colour and a different great. Mukimo Recipe: Mukimo is a meal whose origin is Central Kenya (Agikuyu community) but it's being served in hotels across the country keeping in mind of the diversity of Kenyan.

Instructions to make Mixed mukimo:
  1. Peel and wash the potatoes, sweepotatoes, arrow roots and pumpkin. Bring them to a boil add salt. When almost cook add the ripe bananas
  2. Mash the black beans separately they should be warm or hot. Mash the others separately too add the black beans and continue mashing and incorporating.
  3. In a sauce pan add oil onions and garlic let them cook till evenly brown put to the mashed saucepan and incorporate them well. Serve with steamed cabbages
