The ingredients needed to make Avial:
  1. Make ready For Coconut Paste-
  2. Take 1/3 Cup Fresh Shredded coconut
  3. Take 2 Green Chillies
  4. Prepare 1/2 Teaspoon Cumin Seeds
  5. Prepare For Steaming Veggies
  6. Make ready 3 Cups Mixed Veggies (I used, carrot,long beans, pumpkin,raw banana,bottle gourd,)
  7. Get 1/2 Teaspoon turmeric powder
  8. Prepare 1 Teaspoon salt
  9. Prepare For Tempering-
  10. Make ready 1 Teaspoon Coconut Oil
  11. Get 1/2 Teaspoon Mustard Seeds
  12. Prepare 2 Green Chillies, Slit
  13. Take 2 Sprigs Curry Leaves
Steps to make Avial:
  1. Grind the coconut, green chillies and cumin with half a cup of water to a smooth paste. Set aside.
  2. Take a bowl add in the veggies. Add in the salt and turmeric. Mix well to coat the veggies evenly.
  3. Add half a cup of water to the kadhai. Place the bowl of veggies inside the kadhai. Cook on medium flame.let to boil all the veggies.
  4. Take a pan and add in coconut oil. When the oil is hot, add in the mustard seeds, curry leaves and green chillies. Let the mustard seeds splutter. Add in the steamed veggies and saute for a minute so the oil coats evenly.
  5. Add in the coconut paste and toss well to coat. Cook for a minute. Remove from heat and serve hot with rice.
