Instructions - Grind Green chillies, Ginger & Garlic in mixer, then add all dry masala, half amount mix of fresh coriander and garlic, and Besan to green paste. Sprinkle water or add oil and mix everything well. - (Besan and water helps to keep masala stick to the eggplant slices, so I follow this method. But some people do not add besan. But I think it also enhances flavor as well.) - Now, Cut the eggplant(or aub) 1/4" thick in round pieces. - Rub the Aub slices in this masala paste.

Put some oil in flat bottom frying pan & put masala rubbed aub pieces in pan one by one in single layer. - Do not stack pieces, Just single layer at a time. Cover the pan. - Cook for atleast 5-7 minutes on slow falme, or until done. Turn aub pieces in mid. - Check the slices if it is cooked, remove from pan & sprinkle / garnish with green coriander..
