  1. Prepare 250 g Chicken Breasts
  2. Make ready 1/2 red onion
  3. Take 1 clove garlic
  4. Get 2 large vine tomatoes

  6. Get 1/2 pint chicken stock
  7. Prepare 1 small glass Pinot Grigio
  8. Make ready 150 g pasta (fusilli)

  1. Cube red onion. Crush garlic. Slice peppers into thin strips. Peel tomatoes and chop. Cube chicken.
  2. Cook pasta and cover until remainder finished
  3. While cooking pasta, brown chicken in a lidded frying pan using 1tbsp olive oil.
  4. Add onions and garlic and soften.
  5. Add tomatoes and peppers. Mix into chicken and onions.
  6. Add the chicken stock and wine. Cover and simmer until liquid reduced by about 2/3rds
  7. Toss in the pasta to the mix until coated. Serve with lots of black pepper and the remaining bottle of Pinot!
