The ingredients needed to make Vegetable Fried Rice:
  1. Prepare Day old white rice, (I allow 75g dry weight per person as main),
  2. Prepare 4 eggs, beaten,
  3. Make ready 1/2 bell pepper finely chopped, into cubes,
  4. Get 1 medium carrot very finely chopped into cubes,
  5. Get 4 spring onions, finely chopped, into rings,
  6. Make ready 1 inch fresh ginger, chopped very finely,
  7. Get 3 cloves garlic, very finely sliced,
  8. Make ready 3-4 tbsp premium light soy sauce,
  9. Take 1 pinch table salt, to season,
  10. Take 1/2 tsp MSG (optional),
  11. Prepare Neutral cooking oil, such as rapeseed
Instructions to make Vegetable Fried Rice:
  1. Heat the wok until really hot then add in a touch of oil and the eggs. Move towards the centre of the wok until set then chop into small pieces. Set aside the cooked egg pieces in a bowl for later.
  2. Add more oil to the wok and then add in all of the veg and the ginger but NOT the garlic. Season with the salt and add the MSG. Stir fry for around two minutes. Add in garlic now and fry for 20 seconds moving around the wok until fragrant the add the cooked rice and toss everything together well.
  3. Add the light soy sauce. Toss everything together to fully incorporate the soy and coat the strands of rice. Re-add the cooked egg and stir through well. Stir fry for another minute or so then remove from the heat. Serve up and enjoy! :)
