  1. Remove the skin of the chicken and place in bowl, season with salt and pepper
  2. Heat the oil in a pan.  Add the chicken and  let it cook on one side, flip and let it cook on the other side too. Give it 5-7mins on each side and repeat. You want it to brown on both sides and cook through. I had the heat on medium low
  3. Add the onions, garlic, thyme and let it cook
  4. When the chicken was almost cooked through, I added the sundried tomatoes. If the pan starts to get real dry, add the chicken stock to loosen things up :)
  5. When the chicken is almost done, add the black olives
  6. Remove from the heat, and garnish with crumbled feta and the chopped parsley
  7. SERVE! This goes great with some mediterrean style couscous, a salad, a veggie stir fry, the options are endless
