The ingredients needed to make Bhurji Pav:
Get 4 Eggs
Prepare 3 tbsp Ghee or butter
Make ready 1 large Onion, finely chopped
Get 2 medium Tomato finely chopped
Prepare 1 large, Capsicum/ green bell pepper, finely chopped without the seeds
Prepare 1 Green chilies, finely chopped (add more as per your taste)
Make ready 5-6 tbsp,Green coriander chopped
Make ready 1 1/4 tsp salt (or as per taste)
Make ready 1/2 tsp Red chilli powder
Take 1 tsp Milk
Take 4 pavs
Get 2 tbsp butter to roast the pavs
Instructions to make Bhurji Pav:
Heat ghee/ butter in a kadai/wok, add the onions and cook them till they turn light golden.
Add the tomatoes and green chilies. Cook for 2-3 minutes. - Add the salt, red chilli and half of the green coriander. Mix. Toss in the capsicum. Cover and cook till capsicum is a little soft.
In the meanwhile break the eggs in a bowl add a teaspoon of milk and whisk lightly. Add the eggs to the vegetables and keep mixing till the eggs are almost done. Remove from heat add the rest of the green coriander.
Cut the pav in half horizontally, heat some butter in a pan and roast the pavs in it till they are golden. - Serve the buttery pav with anda bhurji and enjoy. dont forget to have a cup of chai with it :)
