  4. at around the seventh or eighth hour take your meat thermometer and see if the temperature has reached 158° when it has the meat is done. but I cook mine for another hour after that. the average cook time for a four pound roast is eight to ten hours. I recommend cooking for 9 to 10 hours the meat just falls apart.
  5. if cooked for the full time the vegetables will be extremely soft. for a little firmer veggies add them about three hours after starting to roast cooking. but follow the rest of the directions. if you don't have a large crock pot you can always use a very large stew pot same effect just but on low heat and simmer and add a few cups more of water
