To get started with this recipe, we must prepare a few ingredients. You can have jambalaya using 10 ingredients and 7 steps. Here is how you can achieve that.

The ingredients needed to make Jambalaya:
  1. Get 2 tbsp olive oil
  2. Take 1 lb chicken breast, bite sized pieces
  3. Get 1 lb Andouille sausage, 1/4 inch slices
  4. Make ready 1 medium onion, diced
  5. Take 1 cup celery, diced
  6. Take 2-3 peppers, 1 inch pieces
  7. Take 1-2 tbsp cajun seasoning
  8. Prepare 2 1/2 cups low sodium chicken broth or water or both mixed
  9. Prepare 1 can(14.5oz) diced tomatoes or 1 cup of quartered plum tomatoes
  10. Get 1 cup uncooked rice
Instructions to make Jambalaya:
  1. In a large pot coated with olive oil over medium heat, cook the chicken and sausage for 10-15 minutes. Remove from pot.
  2. Add the onions, peppers and celery to the pot. Cook until the onions are slightly translucent. Around 5 minutes. Stir in the seasonings.
  3. Put the chicken and sausages back into the pot. Cook together for around 5 minutes.
  4. Pour in the broth and tomatoes. Bring to a boil.
  5. Once boiling, add the rice. Stir, place the lid on the pot, reduce heat to low, and cook for 30 to 35 minutes.
  6. At the end, stir together.
  7. Enjoy!
