My Granny has been making these for many years and she recently gave me the recipe to help use up some of the tomatoes from my overflowing garden. Hollowed out and stuffed with a runny mix of goat cheese and mascarpone, firm but ripe tomatoes make excellent vessels for a melting fondue. Provençal tomatoes couldn't be simpler to make: cut tomatoes in half, scoop out their innards, and fill them with a quick but flavor-packed stuffing made of fresh bread crumbs, grated Gruyere cheese, garlic and fresh or dried herbs.

  1. First rinse and dry the tomatoes, carefully cut off the top and set aside.
  2. Now with the help of spoon remove seeds and pulp from the tomatoes and set aside.
  3. In a bowl add grated paneer, sweet corn, salt, black pepper powder, dry mango powder, chilli flakes and fresh coriander, mix everything well.
  4. Now stuff the mixture in the hollowed tomatoes. sprinkle some grated cheese over the stuffed tomatoes. make holes with the help of toothpick and insert cloves in it.place all stuffed tomatoes in a baking tray.
  5. Bake them on 200℃ in preheated microwave oven for 10 - 15 mins.
  6. Stuffed cheezy tomatoes are ready.

Hollowed out and stuffed with a runny mix of goat cheese and mascarpone, firm but ripe tomatoes make excellent vessels for a melting fondue. Drizzled with a little olive oil, they bake in the oven until the stuffing. Place tomatoes in a small baking dish and season insides with salt and pepper. Stuff tomatoes with the cheese mixture and arrange on top of potatoes.
