The ingredients needed to make Kand vada:
  1. Take 300 gm kand (purple yam)- boiled
  2. Get 3 medium potatoes(boiled)
  3. Make ready 1/4 cup chopped fresh coriander leaves
  4. Take 2 tbsp ginger- garlic- green chillies paste
  5. Prepare 1 tsp garam masala
  6. Get 1/2 lemon (juice)
  7. Get 1/4 tsp asafoetida (hing)

  10. Get 1 tbsp oil
  11. Prepare 1 tsp urad dal
  12. Make ready 1/2 tsp cummin seeds
  13. Get 1/2 tsp mustard seeds
  14. Get For batter:
  15. Take 1 cup besan (gram flour)
  16. Make ready 1 tsp red chilli powder
  17. Prepare to taste Salt
  18. Take 1/4 tsp soda bi carb
  19. Take as needed Oil for frying
Instructions to make Kand vada:
  1. Pressure cook whole kand(without removing it's skin) and potatoes with little water in cooker vessel,for 4 whistles. Cool the cooker for 1/2 hour before opening it's lid. Peel both kand and potatoes.
  2. Grate boiled Kand(as it will stiff to mash),mashed potatoes,add ginger- garlic, green chillies paste, garam masala, asafoetida, chopped coriander leaves,salt, squeeze juice. In small tempering pan heat oil,do tempering of urad dal,as it turn reddish,add mustard and cummin seeds..as they splutter add it to above prepared mixture.
  3. Mix together..to prepare filling mixture.
  4. Make 12-14 equal portions,roll into cylinderical shapes.
  5. In mixing bowl add besan,salt, red chilli powder,add little water to make pakoras like batter..beat the batter for few minutes.At the time of frying add 1/4 tsp soda bi carb..mix well.
  6. Heat oil in frying pan. Dip one by one prepared cylindrical shape balls in besan batter, and drop them in hot oil.
  7. Deep fry in hot oil on medium flame till golden brown in colour. Serve Hot KAND vadas with green coriander- pudina / mint chutney and tomato sauce.
