Take 2 big tomato pureed
Take 2 tbsp oil

Get 1 pinch soda bi carb

Steps to make Mix veg curry:
Soak cashews nut and poppy seeds in hot water for 1 hour and make paste by grinding in mixer.Wash and cut tomatoes and grind in mixer to make puree. Chopped onion and grind to make paste. Dry grind cinnamon, cloves and coriander seeds. Grind green chillies, ginger garlic.
Wash and chopped cauliflower and soak in salt water for 10 mins(discard the water). Chopped french beans into 1/4 cm pieces.Wash& peel carrot and cube it. In microwave safe bowl add all vegs,add a pinch of soda bi carb,and 1/2 tsp salt and 1/2 cup of water..cover with lid & cook on 80 power level for 5 mins.
As the vegetables being cooked.. prepared gravy. In kadhai add/ heat oil,add chillies, ginger garlic paste, cinnamon, cloves and coriander seeds masala, mix and saute on slow flame for 4-5 mins…add onion paste,saute for 2 mins..add turmeric powder, garam masala,dhania- jeera powder, and saute till brown in colour.
Add butter,mix add cashews nut and poppyseeds paste,mix and add tomatoes puree,salt.. mix and cook for 5 mins till gravy like mixture is formed.
Add boiled vegetables in prepared red gravy..cook for 2 mins. Serve hot mix veg curry with Naan or parathas.
