Get 200 gms Oyster Mushroom/Sippi Kalan
Make ready 2 tsp Oil/Coconut Oil
Take 1/2 tsp Mustard seeds

Make ready as required Curry leaves few

Take FOR MASALA PASTE:-
Prepare 2 tsp Oil
Make ready 20 Shallots roughly chopped
Get 1 Medium Size Tomato roughly chopped
Make ready 1/2 cup Grated Coconut
Make ready 1/2 inch piece of Ginger
Prepare 5 Garlic pods
Take 1/2 tsp Turmeric powder
Take 1 Green Chilli
Make ready as required Water-
Make ready FOR MASALA POWDER:-
Prepare 2 tsp Sesame Oil
Make ready 2 Tbsp Coriander seeds
Prepare 1/2 tsp Fennel seeds
Make ready 5 Fenugreek seeds
Prepare 1/2 inch piece of Cinnamon
Get 2 Cloves
Take as required Curry leaves few
Prepare 3/4 tsp Cumin seeds
Prepare 5 Peppercorns
Take 5 Dry Red Chillies
Indian Mushroom gravy / Kalan kuzhambu for rice and chapathi was in my try list for long time. Recently my neighbor shared this all rounder button mushroom gravy recipe with me. Cabbage is one vegetable that I tend to use as the last option. Mushroom gravy pie with garlicky kale mashed potatoes.
Instructions to make Oyster Mushroom Gravy/Sippi Kalan Kuzhambu:
Wash the Mushroom with hot water twice and drain it. Cut it into thin lengthwise.
In a kadai, roast the ingredients given under masala powder in medium flame. Transfer to a bowl. Cool it completely.
In the same kadai, add sesame oil, shallots and tomatoes given under masala paste. Saute till tomatoes becomes mushy. Atlast add the coconut and saute for a minute. Cool it completely.
First grind the ingredients which has been roasted, to a fine powder. Then add shallots tomato mixture. Along with it add the remaining ingredients given under masala paste. Add required water and grind to a smooth paste.
In a kadai, add oil. Add mustard seeds fry it. Add shallots and curry leaves. Saute till shallots becomes translucent.
Add the masala paste, salt and required water. Cover and cook for 10 mins in medium flame.
Then add the mushrooms, mix well. Add required water. Cover and cook for 15 mins in medium flame.
Transfer to a bowl. Garnish with coriander leaves.
Serve hot with rice, idli and dosa.
