Pour the cooked vegetable mixture into your slow cooker, and add the drained beans and the chicken stock. Set the cooker on low, and cook the soup for at least two hours, or until the beans are tender. Remove and discard the bay leaf. Mince the garlic, dice the onion, slice the celery, and peel and slice the carrots.

  1. Soak beans in water overnight (can do this in the crockpot with it unplugged)
  2. Drain water and pick out bad or split beans.
  3. Chop celery, carrots, garlic, and onion. Add to crockpot along with bay leaves.
  4. Add enough water to cover ingredients. 4 cups worked for me. Can add more if needed.
  5. Add beef bouillon paste (I use better than bouillon beef base), butter, and olive oil.
  6. Cook on high for 6 hours.
  7. Remove bay leaves. Add salt and pepper to taste.
  8. Can use immersion blender to puree part of the soup to thicken if preferred.
