For Limbu mari sev:- Dissolve soda bi carb in one cup of water.
Mix all the ingredients well and bind a smooth dough using the soda bicarb water.
Put a handful of the dough into sev mould and press sev directly into the hot oil in the kadai.
Fry till done and crisp on both sides. Cool and store in airtight container.
For Ratlami sev:- take a pan and dry roast cloves, pepper corn, fennel seeds, and ajwain.
Take out in a bowl and grind with rest of spices and make a fine powder.
Sieve the powder and keep aside.
Take water and oil in a jar and blend with the help of the hand mixture till the mixture become white in colour.
Add this mixture a little liquid at a time in gram flour and mix make a medium soft dough.
Grease hands and sev mould with oil with medium size net.
Heat oil in a deep fry pan and press and squeeze the mould over the pan to make sev on medium heat.
Fry till done and crisp on both sides. Drain the sev on a paper napkin to absorb the excess oil.
Roughly crush the sev to make small pieces. Store in a airtight jar when cool down completely.
