Instructions to make Funky Pasta:
  1. Boil water for pasta
  2. Cut tomatoes in half and place in a medium size bowl. Smash the tomatoes, breaking them and getting their juices out. I usually use the bottom of a cup.
  3. Add the garlic, basil, olive oil, red wine vinegar, and salt (generous) and pepper to the tomatoes and stir together. Let sit for a 1/2 an hour to let the salt draw out the tomato juices.
  4. Cut the mozzarella into small cubes
  5. Drain pasta and run under cool water
  6. Combine the "sauce", mozzarella, and pasta. Taste for any more seasoning (salt, pepper, garlic, olive oil and red wine vinegar) and Enjoy!
