  1. Soak cucumber in cold salted (1 tsp) water for 5 minutes. Drain and squeeze well.
  2. Bring the water to a boil, add bean‐starch vermicelli and cook according to the directions on the package. Cut into bite sized pieces.
  3. Mix all ingredients and marinate.

Add the remaining ingredients- onion, garlic, salt, sugar, five spice, and pulse until finely chopped. Place mixture in a bowl, stir in oil and chicken. Bun is a delicious Vietnamese Vermicelli Bowl. This noodle salad has a wonderfully marinated chicken that is grilled. It's packed full of great flavors and interesting textures.
