Take 11 sheets Cooked Lasagna
Get 2 tablespoons Vegetable Oil for brushing
Take 1 +1/2 cup Mozzarella cheese
Get 1/2 cup Feta cheese
Prepare 1 block Cheddar cheese
Prepare 1 tablespoon Dried thyme
Take 1 teaspoon Oregano
Make ready 1/2 teaspoon Salt
Get 1 Egg large
Take 4 tablespoons Parmesan cheese grated
Make ready Cilantros chopped for garnishing
Steps to make Lasagna Ring Cake:
Let’s start on by preparing Mexican Chicken Tinga. Heat 1/4 cup oil in a pan. Fry 1 +1/2 chicken breasts until golden brown. Remove from the heat.
Heat another wide pan. Use the chicken fried oil. Add 4 fat garlic finely chopped. Add 1 big onion chopped. Sauté until translucent. Add 1 big sized tomato blanched and crushed. Add 1/4 laddle tomato sauce.
Sauté all together until a saucy consistency. Add 1 teaspoon oregano. Add 1 tablespoon crushed cumin + crushed black pepper. Add 1 cup chipotle pepper sauce. Sauté all until combined.
Sprinkle a laddleful water. Then add the fried chicken breasts. Coat chicken in the sauce. Cover and Cook chicken in the sauce for 10 minutes in low heat. Add 1 teaspoon salt. Add 1 teaspoon dried thyme.
After 10 minutes, take the chicken out and shred using a knife. Add the shredded chicken to the sauce.Mix and slow cook for 5 minutes. Mexican Chicken Tinga is ready. Switch off the heat.Keep it aside.
Now, let’s start on with the lasagna Ring Cake. Firstly, Brush oil on the cooked (al dente) lasagna sheets to prevent sheets from sticking to one another. Secondly, Take 4 lasagna sheets and cut into equal halves. Keep aside.
Preheat oven / cooker. I used cooker. Preheating time 20 minutes under medium heat.
Let’s prepare cheese filling. In a bowl, take feta cheese. Add cheddar cheese. Mix both the cheeses.
Add dried thyme and oregano. Break and pour one large egg.
Add 1/2 teaspoon salt. Mix all together to a tight cheesy mixture. Keep aside.
Take a bundt / tube pan. I used tube pan. Brush oil throughout the pan thoroughly.Arrange the oiled lasagna sheets one by one in an overlapping pattern.One end of the sheet should run up the centre of the pan while the other end should be hanging out from the pan. Arrange sheets to form a circle but see there is no gap.
Now sprinkle shredded mozzarella cheese 1 cup throughout on the sheet as 1 layer. Take 1 cup Mexican Chicken Tinga and add on the cheese layer. Spread evenly.
Now take the halved lasagna sheets. Arrange 4 of the first half sheets on the chicken layer.
Now add the entire cheese egg filling and spread evenly.
Use the other 4 half lasagna sheets and cover the cheesy layer. On top add another cup Mexican Chicken Tinga. Spread evenly.
Now bring the hanging ends of the lasagna sheets and seal the chicken layer. The sheets were long and so I rolled and covered. Sprinkle remaining mozzarella cheese on top.
Now place this tube pan inside a preheated cooker. Cover and bake in high for 45 minutes until the cheese looks golden brown. Switch off the heat. Take the pan out and cool for 40 to 1 hour. Tilt the cooled / slightly warm tube pan.
Lasagna Ring Cake falls out beautifully. Sprinkle grated Parmesan cheese on top of the cake. Then sprinkle freshly chopped cilantros / parsley. Delectable Lasagna Ring Cake is ready to serve.
