  8. Prepare 2 packages of white chicken chili seasoning mix by McCormicks
  9. Get 2 to 3 cloves of garlic
  10. Prepare 32 oz of chicken stock
  11. Make ready 2 tbsp Fresh chopped cilantro
  12. Get 2 cup Sharp cheddar cheese shredded
  13. Take 1 Dollop of sour cream on each serving optional

Add chicken to the bottom of a large slow cooker. Top with enchilada sauce, tomatoes, chili beans, black beans, corn and spices. Mix and make sure chicken is covered. Pour the remaining diced tomatoes into a small food processor or blender along with the chipotles and adobo sauce.

Instructions to make crock pot enchilada chili:
  1. Brown meat in skillet until no longer pink, sprinkle with one package of the McCormicks white chili chicken mix. Add leek and plabano pepper
  2. Add chicken stock and all other remaining ingredients to the crock pot ( except cheese). Add meat mixture and second package of white chili seasoning. mix well. Bring to a boil reduce heat and simmer 4-6 hours.
  3. At this point add cheese. Put a dollop of sour cream on each serving optional

Mix and make sure chicken is covered. Pour the remaining diced tomatoes into a small food processor or blender along with the chipotles and adobo sauce. Puree, then transfer to the slow cooker. Add the onion, olive oil, and kosher salt. Add beans, celery, onion and spices.
