  8. As the chicken continues to bake, work on your coconut dhania sauce.
  9. Clean then chop n dice all your vegetables.
  10. In a frying pan, add cooking oil n heat abit.
  11. Add onions n leeks. Cook them n let them not brown.
  12. Add tomatoes n green pepper n stir well.
  13. Add salt n chicken cubes as u mix.
  14. Add tomato paste.
  15. In a separate bowl, mix alittle tumeric, soy sauce n black pepper n mix well. Add the mixture to the cooking mixture.
  16. Let it simmer on low heat for 5 mins.
  17. Add little water n bring to boil.
  18. Add your mashed potatoes n mix well still on low heat. Note: Your sauce/ gravy is supposed to be thick.
  19. Add some tomato sauce. Mix well. When almost ready, reduce your heat to the minimum then add your dessicated coconut. You can as well use coconut cream for better results.
  20. Put off the heat. Add your chopped dhania n give it a good mix. By this time your chicken ought to be ready.
  21. Plate it well in order to pour the sauce on top.
  22. You can either pour the sauce on top since the chicken n sauce are hot or you add your chicken into the sauce pan n mix.
  23. Serve when ready n enjoy to your satisfaction.
