  1. Prepare table spoons of any kind of flour (I use gluten free)
  2. Prepare polenta
  3. Make ready medium eggs
  4. Get grated zucchini (peeled)
  5. Prepare small white potatoes
  6. Take ring of butternut squash
  7. Get small spoon of olive oil
  8. Take Salt and other spices as desired. Pepper goes great!
Steps to make Quick veggie tray:
  1. Preheat the oven to 200 Celsius.
  2. Wash and peel potatoes and then cut them in small pieces.
  3. Do the same with butternut squash. Place potato and squash in a bigger bowl 🥣
  4. Peel and grate the zucchini in a separate bowl and once you have grated it squeeze the water 💦 out. Then add it to the potato and squash bowl.
  5. Add eggs and olive oil. Then sprinkle it with salt and other spices. (Fresh basil or any other herb will give this veggie mixture an unbelievable smell)
  6. Add flour and polenta and then mix everything well. (Meet lovers can add a bit of ham or turkey cut in small pieces. I'm sure bacon would be yummy!!)
  7. Place baking paper on a tray. Spread the mixture evenly to make it 4-5 cm thick covering the whole tray.
  8. Add more polenta on top, maybe a spoon. This will give it that crispiness!
  9. Pop in in the oven for 20-25 min. I like to serve it with fresh lettuce 🥬 or roasted peppers. Kefir goes great as well! Enjoy!
