But I think it also enhances flavor as well.) - Now, Cut the eggplant(or aub) 1/4" thick in round pieces. - Rub the Aub slices in this masala paste.

Cover the pan. - Cook for atleast 5-7 minutes on slow falme, or until done. Turn aub pieces in mid. - Check the slices if it is cooked, remove from pan & sprinkle / garnish with green coriander..
