Take a preheated heavy-bottomed pan. Add a teaspoon of butter. Add the chopped capsicum, mushrooms and carrots. Add a pinch of salt and pepper
Saute the vegetables till they are nicely done. Do not cook the vegetables on very high or very low flame. keep it on a medium flame to have some crispiness
Take another pre-heated heavy bottomed pan. Add 2 Teaspoons of butter.
To it, add chopped onions and garlic. Saute for about 3-5 minutes till the onion changes colour.
Now add rice to it and mix well.Add some salt to it
After mixing the rice with the sauteed onions, add 1 ladle-full of stock while stirring the rice in the pan continuously. Keep repeating this step until the rice is cooked perfectly. Do remember, that the rice needs to be a little mushy and not dry like pulao. You may need less or more stock depending on your rice. If rice is perfectly cooked, leave the balance stock. If the rice feels dry, use normal water after finishing stock.
Once the rice is cooked, add grated cheese & cream. Mix well
Finally add the vegetables, pepper mixed herbs and mix gently.
Serve hot & creamy risotto and enjoy.
