  1. Take Chickpea flour
  2. Get ground cinnamon
  3. Prepare mixed spice (or pumpkin pie spice mix)
  4. Get rice milk (or dairy-free milk of choice)
  5. Prepare vanilla extract
  6. Take salt
  7. Prepare vegan butter or mild-flavoured oil
  8. Take thick slices of soft bread (white or wholegrain / gluten-free, if neeed)

  1. Whisk the chickpea flour, spices, milk, vanilla and salt together in a shallow container.
  2. Gently heat the butter or oil in a skillet.
  3. Dip a slice of the bread into the mixture and coat well on each side. Place in the skillet and fry on medium heat for a minute on each side until golden brown.
  4. Repeat with the other slices.
  5. Serve with fruit, maple syrup, berries, yoghurt… and enjoy :-)
