  1. Mix the vegetable stock cube with the water. Put all the ingredients for the dressing in a blender and blitz. Refrigerate until chilled.
  2. Cut the anchovy fillets into thin strips (halved side to side then lengthways)
  3. Put the French beans (cut to half length) in boiling water and vigorously simmer for 5 minutes. Microwave the potatoes in a little water and microwave for 3 minutes. Dry the anchovies on paper kitchen towel.
  4. Prepare: the eggs in quarters or one sixths; the potatoes in halves; the plum tomatoes in quarters, and the olives in quarters.
  5. Arrange the shredded the shredded lettuce in four wide bowls. Add the eggs around the edges. Stack the tuna chunks in the middles. Spread the other ingredients evenly among the surfaces of the lettuce. Scatter the ripped wild rockets leaves evenly over the bowl and serve with the dressing as an accompaniment.
