The ingredients needed to make Chile Relleno:
  1. Make ready 4 relleno peppers
  2. Get 1 package chorizo
  3. Prepare 1 can black beans
  4. Make ready 1/2 package sliced mushrooms
  5. Take 1/2 red onion
  6. Take 2 tablespoons butter
  7. Get Breading of your choice (I use fish fry)
  8. Get 3 tablespoons minced garlic
  9. Prepare 1/3 cup ranch
Instructions to make Chile Relleno:
  1. Chop onions and mushrooms and place in pan with butter and garlic.
  2. Cut a slice down relleno peppers and gut. Place in oven at 400 until golden, rotating occasionally.
  3. Once onions and mushrooms are saluted, add chorizo.
  4. Once chorizo has brown add can of rinsed black beans.
  5. I usually add ranch now, cumin, chili pepper, and seasoned salt.
  6. Remove rellenos from oven and cook them with cold water.
  7. Stuff peppers with beans, meat, and veggie mix.
  8. Cover peppers with breading (I mix fish fry with a sauce I like such as ranch and lather it on peppers).
  9. Deep fry or bake at 400 for 20 minutes.
  10. Cover in sauce of your choice (I like queso since I don't add cheese to the inside).
  11. Enjoy!
