Steps to make Aligarh special street food:
Take an iron pan, put 4Tbs of oil in it, now add Jeera, when cumin seeds crackle, add asafoetida, add chopped ginger, add green chillies, and turmeric powder.
Add chopped potatoes with peel add water and salt cover it And cook for 10 minutes. Add crushed cloves & blak pepper,dry mango powder 1/2 tbs garam masala,coriander powder.
For stuffed kachori soaked udad daal and grind it with minimum water. Take a pan add coarsely grind daal add salt,coriander powder, turmeric. Chaat masala and fennel seeds powder add Amchoor powder.
For Kachori outer layer. Take all purpose flour add oil salt.ajwain.make a soft dough. & rest for 30 minutes.
Now take small part of the dough, fill the stuffing in the middle. Make the rough round. Frying all kachori lightly, take out the kachori and crushed lightly, then fry it once again.
Serve with Raita
