The ingredients needed to make Seafood Chowder:
  1. Prepare 200 g cellery diced (can use fennel instead)
  2. Take 280 g onions diced
  3. Take 400 g carrots diced
  4. Get 140 g bacon diced
  5. Prepare 1 can corn 300g(dried weight)
  6. Make ready 500 g sea scallops
  7. Take 400 g crab (with shell)
  8. Get 500 g shrimps, peel(save shells)
  9. Prepare 200 ml white wine
  10. Make ready 1 lemon
  11. Get 800 gram white fish (I mix coalfish and cod)
  12. Prepare 200 ml heavy cream
  13. Prepare 1600 g potatoes peeled and diced 1 cm chunks
  14. Make ready 1500 ml water
Steps to make Seafood Chowder:
  1. Cut celery, carrot and onions and sweat under lid.
  2. Add the bacon and corn
  3. Peel shrimp then In separate pan cook the shrimp shells in some white wine and 500ml water, strains stock into a new pot and boil the crab in this. (Cook about 5-10 minutes)
  4. Pick meat of the crab and put aside.
  5. Sear scalops well then take 6 of them and cut into 1/8s and put with shrimp and crab meat, the rest goes with stock in a blender
  6. Mix stock in blender so you will end up with fishy seafood smoothie =)
  7. Add potatoes and fish to vegetables along with stock +1000ml water and cook until the potatoes are done.
  8. At the end add crab meat rest of scallops and the peeled shrimp.
  9. Finally put the in cream and a splash of white wine maybe some lemon juice some salt and pepper then you are good to go !!
