Prepare 3 cup Mexican melting cheese
Prepare 1 cup Monterey Jack

Make ready 2 each links Mexican chorizo sausage
Steps to make Queso Flameado (not for Chips):
Set oven to 350°F
Heat an oven proof skillet on medium high heat. I use a spray oil also.
Remove from casing if that applies to the sausage you have. Put sausage in skillet, break it up as you cook it.
Chop the chile into thin strips about 2 inches long.
Add the chile to the sausage when it is about half way done.
If the cheese is not shredded, cut it into chunks to assist melting.
Turn off the heat on the skillet when the sausage is done. Drain off excess oil if you desire.
Add the cheese to the skillet. I sort of layered it.
Place in oven until bubbly and browned to your liking. About 15 minutes. If for a party, use a casserole dish instead of skillet, it presents better.
Heat some tortillas while the queso is in the oven to serve the queso in.
Queso will be extremely hot, dish on tortillas, but let it cool some so you don't burn your mouth.
