  1. Make ready 2 cup self raising flour
  2. Get 400 grams tin creamed corn
  3. Get 250 ml buttermilk

  1. Preheat oven to 180c/350f
  2. Set asise 1/4c of the corn and 1/4c of the cheese
  3. Place flour in bowl and make a well in the center
  4. Add all other ingredients, except set aside corn and cheese
  5. Fold with metal spoon until just combined
  6. Spray muffin tray with vegetable oil
  7. Spoon mix in to cups of muffin tray, leaving one cup empty
  8. Evenly dollop tops of mix with reserved corn and cheese
  9. Fill empty cup halfway with cold water (this helps stop muffins drying out during cooking)
  10. Cook for 20mins or until tops are golden and spring back when touched

These are bland and not really worth the effort to make corn muffins from scratch instead of a mix.
